150 g of Kani Fresh | ? cup of Kani Fresh ( Shredded and fried) | 1 ? of pineapple cut into pieces | 1 piece of cinnamon cut into 2 inch piece | 3 pieces of star anise | 3 tablespoons of curry powder | 1 teaspoon of salt | 2 tablespoons of vegetable oil | 3 tablespoons of palm sugar | ? cup of coconut milk | 1 ? cups of water | rice cooked with coconut milk
Ingredient of chilli paste
50 g of shallot | 10 g of garlic | 6 g of ginger | 2 tablespoons of ground dried shrimp | 4 pieces of dried chilli (sliced and soaked)
1. Pound all ingredient of chilli paste to mix well.
2. Stir fried ingredient (No.1) and then add pineapple, stir fried about 5 minutes.
3. Add water, coconut milk, cinnamon, star anise and curry powder. Season with palm sugar, salt and simmer about 15-18 minutes (or condensed soup) and then add Kani Fresh, wait to boiled and set aside
4. Serve with rice cooked with coconut milk and sprinkle with crispy Kani Fresh
