6 dried chilies | 7 slices of galangal | 3 pieces of coriander root | 7 pieces of peeled shallot | 8 cloves of peeled garlic | 2 chopped lemongrasses | 1 cup of undiluted coconut milk | 1 cup of diluted coconut milk | 1 cup ground roasted peanut | 1/4 cup of palm sugar | 2 teaspoons of salt | 2 tablespoons of tamarind juice
1. Pound chilies, galangal, coriander root, shallot, garlic and lemongrass
2. Cook undiluted coconut milk then add pounded ingredients (no.1). Then add diluted coconut milk and peanuts, stir well. Season with palm sugar, salt and tamarind juice. Simmer till thicken then set aside.
3. Putvegetableonadishandservewithdressingontop. Decorate a dish with boiled eggs, Crab Stick tofu and tomatoes. Fry “HIPPO” Original Recipe Frozen Dough till it is crispy both sides and scatter with peeled fried beans.
