Pancit Malabon with Kani Kani


100 g “KANI KANI” | 100 g shelled and deveined shrimp | 100 g sliced squid | 100 g boil and shelled green mussel | 2 cubes thick egg noodles | 3 stalks shredded green onion | 2 tablespoons minced garlic | 50 g tapioca flour | 2 tablespoons rice flour | 150 g water (for flour mixture) | 1 tablespoon seasoning sauce | 1 tablespoon fish sauce | 1/2 teaspoon pepper | 1 teaspoon sugar | 2 duck eggs | 1/4 cup vegetable oil | 1/4 teaspoon salt | Water


1. Boil noodles in hot water for 2-3 minutes, then put in cool water. Drain and stir with 1 tablespoon of vegetable oil in a bowl.
2. Stir fish sauce, pepper, sugar and seasoning sauce.
3. Cook noodles with half of sauce (no.2) in a pan, medium heat.
4. Melt and stir tapioca flour, rice flour, water and salt in a pan.
5. Fry garlic in a pan until golden brown and then add shrimp, squid, mussel and “KANI KANI”. And then cook with other half of sauce (no.2), add mixed flour with water (no.4), then duck eggs.
6. Put cooked flour (no.5) on a plate with noodles (no.3), and garnish with green onion.
