Vietnamese Sour Tamarind Soup (Canh Chua)

Ingredients
7 pcs of sliced Crab Stick | 100 g of shelled and deveined prawns (with tail) | 150 g of sliced Sriracha pineapple | 3 stalks of kroon (peeled and sliced) | 100 g of sliced raw tomato | 3 cloves of pounded garlic | 3 pcs of red chilies (sliced diagonally) | 3 stalks of parsley? | 3 stalks of balloon vine | 3 cups of coconut water | 3 tbsp of fried shallots | 2 tbsp of fish sauce | 3 tbsp of tamarind juice | 1 tsp of sugar| 1/2 tsp of salt

Direction
1. Boil coconut water in a pot over high heat until boiled. Season with sugar, fish sauce, tamarind juice and salt. Once it boiled again, add pineapple, kroon, tomatoes, red chilies and garlic. Continue boiling soup.
2. Add prawns and boil until cooked, then Crab Stick,parsley and balloon vine.
3. Serve in a bowl and sprinkle with fried shallots.
