Kanom jeen nam nyui (Lanna Style Nam Ngeaw (Red cotton Tree) Noodles)


Ingredients

7 stick of Crab Stick | 1 kg of Vermicelli | 500 g of pork ribs chop into small pieces | 500 g of chicken blood (boiled) sliced
| 300 g of chopped lean pork | 500 g of cherry tomatoes | 2 tablespoons of salt | 10 pcs of red cotton flower | ? cup of vegetable oil
| 10 cups of water | Fried garlic | Wheat flour | Cool water | Vegetable oil | Shred coriander, spring onions
Side dish
bean sprouts | spring onion | pickle | lemon | fried chille

Ingredient of curry paste
20 seeds of dried chillies (soak until soft) | 1 teaspoon of mince coriander root | 5 of mince galangal | 10 g of chop fresh turmeric
| 2 tablespoons of mince lemon grass | 7 g of shallot | 1 teaspoon of salt | 3 of garlic | 20 g of grilled rotten beans

Direction

1. Pound all ingredient of curry paste thoroughly

2. Soak red cotton flower

3. Boil pork ribs and red cotton flower until boiled

4. Stir fry curry paste until fragrant. Put pork fried until cooked, then add tomatoes and stir them. Put all in a pot (no.3) and boil it

and then add chicken blood.

5. Reduce heat and simmer until pork tender and seasoning with salt

6. Mix wheat flour with cool water add Crab Stick and deep fried until golden brown. Served with Nam Nyul , vermicelli and side dish.
